Gluten Free Chicken Cultlets!
If you follow me on my socials, you know that I eat these chicken cutlets weekly. These cutlets are incredibly versatile, and can be transformed into chicken parmesan, or even buffalo chicken!

Ingredients:
1 pack of thinly sliced organic chicken breasts (I love to use Bell & Evan's)
1 cup of Gillian’s Gluten-Free breadcrumbs (both plain and Italian varieties are delicious!)
2 eggs (for the egg wash)
1/2 cup extra virgin olive oil (EVOO) – you want enough to fully cover the pan for frying
Your favorite seasonings (I recommend simple salt, pepper, garlic powder, and onion powder. For an extra kick of flavor, add some paprika!)
Instructions:
1. Season the Chicken:
On parchment paper, season your thinly sliced chicken cutlets with salt, pepper, garlic powder, and onion powder. Feel free to adjust the seasonings to your taste! You don’t need to pound these cutlets since they’re already pretty thin!
2. Prepare the Egg Wash:
In a wide bowl, crack the two eggs and whisk them together to create an egg wash.
3. Coat the Chicken:
Dip each seasoned chicken cutlet into the egg wash, making sure it’s fully coated. Then, roll it in the gluten-free breadcrumbs until evenly covered. Remember, we’re skipping the flour step because it’s not necessary!
4. Heat the Pan:
In a large skillet, heat 1/2 cup of extra virgin olive oil over medium heat. Ensure the oil is evenly distributed in the pan so that it fully covers the bottom.
5. Fry the Chicken:
Once the oil is hot, carefully place the coated chicken cutlets in the pan. Fry them for about 3 minutes on each side. Given that they are thinly sliced, they will cook quickly. Always use a meat thermometer to ensure they reach an internal temperature of 165°F.
6. Serve:
Once cooked, remove the chicken cutlets from the pan and place them on a paper towel-lined plate to absorb any excess oil. Serve hot with your favorite sides, and enjoy the crispy, flavorful goodness of your homemade chicken cutlets!
