Ingredients
For the Chicken Meatballs
1 lb organic ground chicken
¼ cup gluten-free breadcrumbs
1 large egg
¼ cup crumbled feta cheese
¼ red onion, finely diced
1 tablespoon tzatziki
Salt, pepper, and garlic powder, to taste
For the Bowl
Fresh arugula
Extra virgin olive oil
Fresh lemon juice
Sliced cucumber, quartered
Cherry tomatoes, halved
Pickled red onions
Additional crumbled feta
Fresh dill
Tzatziki, for serving
Lemon wedges, for garnish
Optional: Greek vinaigrette for drizzling
Recipe
1. Prepare the Meatball Mixture
In a large mixing bowl, combine the ground chicken, breadcrumbs, egg, crumbled feta, and finely diced red onion. The secret ingredient here — and what gives these meatballs their signature tang — is a generous spoonful of tzatziki folded directly into the mixture. Season generously with salt, freshly cracked black pepper, and garlic powder.
Using a large fork, gently mash and mix until all ingredients are fully combined. Avoid over-mixing to keep the meatballs light and tender. If the mixture is too sticky, add another egg!
2. Shape & Bake
Preheat your oven to 350°F (175°C). Line a baking tray with parchment paper and form the chicken mixture into evenly sized meatballs.
Arrange the meatballs on the prepared tray and bake for 30 minutes, finishing under the broiler for the final 2 minutes to achieve a beautifully golden, slightly crisp exterior.
3. Prepare the Garnishes
While the meatballs bake, prepare your fresh toppings:
Slice the cucumbers into quarters
Halve the cherry tomatoes
Pull a few sprigs of fresh dill and set aside for garnish
Once the meatballs are out of the oven, drizzle them with lemon juice while still warm to brighten the flavors.
4. Assemble the Bowls
Begin with a base of peppery arugula, lightly dressed with lemon juice and a drizzle of extra virgin olive oil. Alternatively, a Greek vinaigrette makes a wonderful base dressing.
