Mini Pommes Anna (Potato Cupcakes!)

Ingredients:
- 5 russet potatoes
- 1 stick of butter
- 4 cloves of chopped garlic
- A handful of chopped parsley
- 1/4 cup of thyme and rosemary combined (or your favorite herbs like dill for a fresh twist)
Instructions:
1. Prep the Potatoes: Begin by washing and peeling the russet potatoes. The goal is to have clean, smooth slices for that perfect texture.
2. Slice the Potatoes: Using a mandolin or a sharp knife, slice the potatoes very thinly. Aim for uniform slices to ensure even cooking.
3. Make the Herb-Infused Butter: In a pan over medium heat, melt the stick of butter. Add the chopped garlic, parsley, and your choice of herbs (thyme and rosemary work beautifully together). Sauté until fragrant—around 2-3 minutes—making your kitchen smell absolutely divine!
4. Cool the Butter Mixture: Remove the pan from the heat and let the butter mixture cool for about 5-10 minutes. This step is crucial to prevent the potatoes from cooking prematurely.
5. Combine Potatoes and Butter: In a large mixing bowl, place the thinly sliced potatoes. Pour the cooled butter mixture over the potatoes and mix thoroughly, ensuring that every slice is coated in that delicious buttery goodness. Be gentle, as some slices like to stick together.
6. Prepare the Muffin Tray: Grab a cupcake or muffin tray and spray the cups with nonstick spray or extra virgin olive oil to ensure easy removal after baking.
7. Layer the Potatoes: Start layering the potato slices in the muffin tins, filling them all the way to the top. Remember, they will shrink as they bake, so don’t be shy!
8. Bake to Perfection: Preheat your oven to 375°F (190°C) and bake the potatoes for about 1 hour. Halfway through, cover them with parchment paper to prevent burning and ensure even cooking.
